Didi's herb oyster mushroom sauce for fish

Ingredients for 4 servings:

  • 300 g king oyster mushrooms
  • 1 m.-sized onion(s)
  • 500 ml vegetable stock
  • 200 ml cream
  • 1 lemon(s), zest and juice
  • 1 tsp dill tips
  • 1 tsp sea salt, from the mill
  • 1 tsp pepper, mixed, from the mill
  • 1 tsp sugar
  • possibly sauce thickener if required
  • 2 tbsp sunflower oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the onion and chop it into very small cubes. Heat a pan with 2 tablespoons of oil and sauté the diced onion until lightly browned. Trim and slice the king oyster mushrooms. Add the mushrooms to the onions and fry. Once browned, season the mushrooms with salt and pepper and deglaze with the vegetable stock. Add the cream, lemon zest, lemon juice, sugar, and dill tips and reduce the liquid. If necessary, use a sauce thickener according to the package instructions. This sauce tastes excellent with fish dishes.
