Balsamic chicken

Ingredients for 2 servings:

  • 500 g chicken breast
  • 1 onion(s)
  • 4 tbsp Balsamic vinegar, white
  • 1 bunch of chives
  • 100 g diced tomatoes
  • 200 ml vegetable stock
  • 200 g crème fraîche
  • 1 tsp paprika powder
  • 1 tsp tomato paste
  • 1 tsp sugar
  • some oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Season the chicken breasts with salt and pepper and sear in a little oil. Then cook the meat in the oven at 200°C for about 25 minutes. Sauté the onion in the drippings and deglaze with vinegar and vegetable stock. Add the paprika, sugar, and tomato paste and let it reduce slightly. Stir in the crème fraîche and bring to a boil briefly. Season everything with salt, pepper, and sugar. Finally, add the diced tomatoes and chives. Do not boil any further. Tastes great with rice or crusty bread.
