Ingredients for 8 servings:

  • 300 g sugar
  • 250 g sugar (brown rock sugar)
  • 500 g flour
  • 1 egg(s)
  • 1 egg(s), including the yolk
  • 1 tsp cinnamon
  • some lemon(s) – zest, grated
  • 125 g honey
  • 1 tbsp rum or milk
  • 1 tsp potash
  • 6 tbsp water

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Caramelize the sugar in a pan and stir it into the water until smooth. Once cooled, whisk it with the eggs for 10 minutes until frothy. Dissolve the potash in milk or rum, add it to the sugar mixture along with the liquid honey, and mix thoroughly with all the other ingredients. Cover and refrigerate in a stone pot for 8 days. Then knead again, roll out to a thickness of about 2-3 cm, and cut into strips about 10 cm long and 2 cm wide. Brush with egg white and bake at a low heat.
