Ingredients for 8 servings:

  • 500 g beet syrup, or other
  • 3 tbsp water
  • 5 g potash
  • 150 g sugar (rock sugar)
  • 100 g sugar
  • 600 g flour
  • 50 g candied orange peel, diced
  • 1 pinch(s) allspice
  • 3 tsp anise, heaped
  • 2 tsp coriander
  • 2 tsp cinnamon, heaped
  • 1 pinch(s) allspice (clove pepper, allspice)
  • 1 pinch of cardamom
  • 1 pinch of nutmeg
  • 1 pinch of baking soda

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 15 minutes; Total time approx. 12 hours 45 minutes

Heat the syrup with water. Dissolve the potash in a little water. Add the chopped rock sugar and the remaining ingredients to the syrup. Knead the dough well. Let it stand overnight. Roll out to a thickness of 3 mm. Cut out rectangles. Line a baking sheet with baking paper. Place the dough pieces on top and bake. Bake at 200-220°C for about 15 minutes.
