Ingredients for 4 servings:

  • 200 g flour
  • 75 g butter
  • 1 egg yolk
  • 1 tsp salt
  • 3 tbsp water, cold
  • 4 stalk(s) leeks
  • 1 tbsp butter
  • 250 ml milk
  • 3 eggs
  • Salt and pepper, white
  • 1 pinch of nutmeg
  • 50 g bacon, streaky
  • 4 tbsp cheese, grated

Working time approx. 40 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 40 minutes

Homemade leek cake

Make a dough from flour, butter, egg yolks, salt, and water and let it rest in the refrigerator for 1 hour. Trim the leeks, slice them into thin rings, and sauté them in 1 tablespoon of butter for 10 minutes. Beat the eggs with salt, pepper, and nutmeg. Bring the milk to a boil, remove the pan from the heat, and stir in the egg mixture. Return the egg mixture to the heat and reduce, stirring constantly, until it becomes creamy. Then add the leek rings and let the mixture cool. Line a buttered tart pan with the dough and pierce it several times with a fork. Spread the leek mixture on top, sprinkle with diced bacon and grated cheese. Bake in a preheated oven at 200°C on the middle rack for 30 minutes. Let the tart cool for 5 minutes before removing it from the pan.
