Ingredients for 1 servings:

  • 200 ml red wine, dry
  • 100 ml orange juice
  • 1 lemon(s), juice and grated zest
  • ½ tsp cinnamon
  • ½ small bottle(s) of bitter almond flavoring
  • 1 vanilla pod(s)
  • 100 ml rum
  • 150 g cranberries, dried
  • 30 g almond flakes
  • 500 g apples, sour, peeled and pitted weighed
  • 500 g gelling sugar 2 : 1

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 15 minutes; Total time approx. 1 day 45 minutes

The day before, bring the red wine to a boil with orange juice, lemon juice, lemon zest, scraped vanilla pod, vanilla seeds, bitter almond flavoring, and cinnamon, and let it steep overnight. Soak the cranberries in 100 ml of rum, also overnight. Roast the flaked almonds in a dry pan until light brown. You can also do this the day before. The next day, peel and core the apples, and weigh out 500 g. Finely dice them and simmer with the almonds in the red wine for about 10 minutes. Then fish out the vanilla pod, add the gelling sugar, and boil briskly for another 4 minutes. Immediately pour into hot, rinsed jars and turn them upside down for a short time. This jam will keep for about 6 months.
