Christmas apple marzipan jam

Ingredients for 1 servings:

  • 1.6 kg apples, sweet
  • 200 g marzipan paste
  • 2 lemons, juice
  • 16 drops of bitter almond oil
  • 2 tsp cinnamon
  • 1 kg gelling sugar 2:1
  • 200 g raisins

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Preheat the oven to 190°C (top/bottom heat). Peel and core the apples. Cut into small pieces and place in an ovenproof dish. Place in the oven for about 20 minutes, until lightly browned. Using a hand blender, puree the apple pieces with the marzipan mixture (cut into small pieces), the lemon juice, the cinnamon, and the bitter almond oil. If you like, you can leave some coarse pieces in the mixture. Bring this mixture to a boil in a saucepan with the gelling sugar. Once boiling, add the raisins. Simmer for another 5 minutes, stirring constantly. Rinse the jam jars with boiling water, pour in the jam while it’s still hot, and seal immediately. Turn the jars upside down for 15 minutes. This makes 4 jars of 250 grams each. The jam also tastes delicious on crêpes, waffles, or as an applesauce substitute.
