Ingredients for 3 servings:

  • 500 g kale, fresh, sliced, or kale from the jar
  • 2 onions, sliced
  • 2 cloves garlic, sliced
  • oil
  • 4 tomatoes, diced
  • cumin
  • Curry powder or turmeric
  • Chili powder or hot paprika powder
  • Paprika powder, smoked
  • coriander
  • ½ lemon(s), the juice
  • 200 g meat substitute (soy or seitan meat), ready to eat, as desired
  • Peanuts, chopped, as desired

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Sukuma Wiki – a kale dish enjoyed in several East African countries – is a very aromatic preparation. First, fry the onions in oil in a large pan. Then add the tomatoes and spices and simmer briefly. Add the cabbage and lemon juice and mix. Let everything simmer together – if using fresh cabbage, until the cabbage is tender. Mix in soy or seitan to taste. Season to taste, and it’s ready. Optionally, you can sprinkle peanuts on top. It goes well with chopped potatoes. According to African tradition, people eat together from a large plate by holding a piece of white bread or flatbread between three fingers and using them to pick up the food (i.e., eating without cutlery). This dish is ideal for this.
