African tomato sauce with bananas

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 pack of tomatoes, pureed, approx. 500 g
  • 1 banana(s)
  • 2 tbsp raisins
  • 1 tsp cayenne pepper
  • 1 tsp turmeric
  • 1 tsp cinnamon powder
  • 2 tbsp cocoa powder
  • 1 tsp chili powder
  • n. B. Salt
  • e.g. broth, liquid
  • 4 tbsp almond flakes
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

simple and vegan

Finely dice the onion and garlic. First, sauté the onions in oil until translucent, then briefly add the garlic. Add the turmeric, cinnamon, chili powder, and cocoa powder, taking care not to burn. Add the passata, raisins, and stock, if desired. Thinly slice the banana and add it as well. Simmer for about 10 minutes until thickened. Meanwhile, lightly toast the flaked almonds in a small pan over medium heat. Be careful, they burn easily! Finally, season the sauce with salt and cayenne pepper. This sauce goes well with rice. Top with the flaked almonds.
