Ingredients for 4 servings:

  • 200 g beans, green
  • 1 chili pepper(s), chopped
  • 2 tbsp peanuts, roasted and salted
  • 2 tbsp peanut butter
  • 3 potatoes
  • 3 garlic cloves
  • 1 tbsp olive oil
  • ½ tsp allspice, ground
  • ½ tsp salt
  • 2 tsp thyme
  • 400 g tomatoes
  • 2 onions
  • n. B. water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Roughly dice the vegetables and chop the tomatoes, garlic, and onions. Heat the oil and sauté the onions and garlic until translucent. Add the peanuts and chili pepper and fry briefly. Now add the tomatoes and cook over high heat until slightly softened. Then add the remaining vegetables, pour in 150 ml or more of water, and simmer in a covered pan over medium heat for 10 minutes. Mix in the allspice, freshly chopped thyme, and peanut butter and simmer for another 5 minutes. Season the vegetable stew with salt and serve immediately. We usually eat it with couscous and sprinkle a few peanuts on top. It’s also delicious with bread or rice.
