Ingredients for 4 servings:
- 100 g butter, or 3 tbsp ghee
- 5 leeks, cut into long, thin strips (like spaghetti)
- 2 vegetable onions, halved, then sliced
- 1 white cabbage, cut into fine strips
- 500 g spinach, fresh, stemmed, washed, chopped
- 100 g sunflower seeds
- salt and pepper
- 6 sweet potatoes, peeled, thinly sliced
- 500 ml vegetable oil, for frying
- 2 tsp cumin, ground
- 2 tsp sea salt, coarse
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Heat butter in a pan. Add onion, leek, and cabbage and fry until soft. Add spinach and sunflower seeds, continue cooking until the spinach is tender, then season with salt and pepper. Chips: Heat oil and fry the sweet potato slices in batches until golden brown. Drain on kitchen paper. Season with cumin and sea salt.
