Shrimp in chutney – tomato – sauce with pasta

Ingredients for 2 servings:

  • 7 tomatoes, dried, preserved in oil
  • 12 shrimp(s), shelled, deveined
  • 500g pasta
  • 2 tbsp chutney, e.g. mango, apple,…
  • 1 clove(s) garlic, small
  • 100 ml water
  • some Parmesan
  • salt and pepper
  • n. B. herbs

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

light, tasty and quick to prepare

Cook the pasta according to the package instructions and drain. Place the garlic clove and the sun-dried tomatoes in a mixer or blender with a little of the tomato oil and process until finely chopped. Add a little of the tomato oil to a large pan and briefly fry the prawns on both sides. Remove from the pan as soon as they are pink. Add the sun-dried tomatoes to the same pan and fry briefly. Pour in the water and stir in the chutney. Simmer until the sauce is creamy. Season to taste and add the prawns. Mix the sauce directly with the pasta and Parmesan cheese and serve on warmed plates. I always use homemade tomatoes marinated in oil and fiery apple chutney for this recipe. Both recipes can be found in the database.
