Ingredients for 4 servings:

  • 3 tbsp oil (palm oil), red, or olive oil
  • 4 carrots, thinly sliced
  • 1 onion(s), thinly sliced
  • 1 white cabbage, sliced ​​into thin strips
  • 5 potatoes, peeled, cut into 1 – 2 cm cubes
  • 1 tsp salt
  • ½ tsp turmeric
  • ½ tsp cumin
  • ½ tsp pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 15 minutes

Can be served as a side dish or main course.

Heat the oil in a large pan. Add the carrots and onions and sauté for 5 minutes. Add the salt, spices, and cabbage; cover and sauté for 15-20 minutes. Stir occasionally. Add the potatoes, reduce the heat, and continue sautéing, covered, for another 15-25 minutes, until the potatoes are tender, stirring occasionally. Serve with couscous or injera.
