Airy fried egg with ham, tomatoes and cheese

Ingredients for 2 servings:

  • 4 eggs
  • 1 tomato(s)
  • 2 slices of ham
  • 50 g cheese, grated
  • some chives
  • salt and pepper
  • some paprika

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Preheat oven to 200°C (top/bottom heat). Butter two baking dishes (each suitable for one serving). Separate the eggs and set the yolks aside in a bowl. Beat the egg whites with a pinch of salt until frothy. Chop the ham into small pieces, dice the tomatoes, and cut the chives into small rings. I peel the tomatoes and remove the seeds beforehand. Divide the egg white mixture between the two baking dishes. Spread the ham, tomatoes, grated cheese, and chives on top and place everything in the oven. Bake for about 10 minutes, until the mixture has firmed up a bit. Now add two egg yolks to each dish and sprinkle with a little more cheese, if desired. Return to the oven for another 3-4 minutes, depending on how firm you like the yolks. Before serving, sprinkle a little pepper and paprika over the egg yolks and serve immediately. Beating the egg whites makes the fried egg nice and fluffy! Enjoy!
