Caramelized foam pancakes with apple sticks à la Didi

Ingredients for 4 servings:

  • 2 cups flour
  • 6 tbsp sugar
  • 1 bag of baking powder
  • 1 tsp salt
  • 3 m.-sized eggs
  • 1 ½ cup(s) milk
  • 1 cup sunflower oil
  • 1 sachet of lemon peel flavoring
  • 3 m.-sized apples

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Sift together the flour, baking powder, salt, and 2 tablespoons of sugar and mix. Separate the eggs. Beat the egg whites until stiff peaks form, then beat the egg yolks until frothy. Add the egg yolks, egg whites, milk, oil, and lemon zest flavoring to the dry ingredients. Carefully fold everything in and let rest for half an hour. Peel the apples, cut them into pieces, and remove the cores. Cut the apple pieces into sticks and fold them into the batter. Heat a greased pan, add a ladleful of batter, and cook until the surface is dry and bubbling. Turn the pancake over and cook the other side in the same way. Remove the finished pancake from the pan and keep warm. Repeat with the remaining batter until all the batter is used up. Sprinkle each pancake with 1 tablespoon of sugar and caramelize it using the gourmet torch. Arrange and serve.
