Airy Parmesan Coins

Ingredients for 1 servings:

  • 80 g Parmesan, freshly grated
  • 100 g butter, diced
  • 100 g flour
  • 2 egg yolks
  • 1 tbsp olive oil
  • poppy
  • 1 pinch(s) of pepper
  • some milk

Instructions

Working time approx. 20 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Combine the flour, pepper, and Parmesan cheese, add the diced butter, and knead well. Knead in the oil and 1 egg yolk. Shape the dough into a ball, wrap it in cling film, and let it rest in the refrigerator for 40 minutes. Preheat the oven to 175°C (fan). Roll out the dough on a well-floured work surface, cut out circles, and place them on a baking sheet lined with baking paper. Finally, brush each circle with the egg yolk whisked with milk and sprinkle with poppy seeds. Bake for 20 minutes, then let it cool completely. This amount is enough for one baking sheet.
