Al Dente or Soft-boiled: Which Pasta Is Healthier?

Spread the love

In fact, it can make a difference whether you cook pasta al dente or soft. However, the health effects are too small for al dente noodles to really be called healthier.

The longer noodles cook, the softer they become. The more al dente the noodles are, the more intensively they have to be chewed. As a result, food intake slows down and the natural feeling of satiety can occur earlier. This can result in you consuming fewer calories.

In addition, our bodies can break down the carbohydrates in soft-boiled pasta into sugar more quickly. This process takes longer with noodles cooked al dente, so the blood sugar level rises more slowly and the feeling of satiety lasts longer. This can help you eat less and cut calories.

Wholemeal pasta is even healthier in this respect. They contain a particularly large amount of dietary fiber and, when cooked al dente, fill you up for a particularly long time. Incidentally, the basic calorie content is not affected by cooking the noodles: the raw noodles only absorb calorie-free water and then provide just as many calories as before. Because the noodles also gain mass through the water, only the energy density is slightly lower. If you want to enjoy noodles with a low-calorie count, you should primarily use a light pasta sauce.
