Ingredients for 1 servings:

  • 250 g wheat flour
  • 125 g potato starch
  • 125 g sugar
  • 1 egg(s)
  • ⅛ ml sour cream
  • 1 packet of vanilla sugar
  • 1 pinch of baking powder
  • 70 g butter

Instructions

Working time approx. 1 hour; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes

Mix the dry ingredients. Mix the butter, sour cream, and egg. Knead both mixtures together and place the dough ball in the refrigerator for 15 minutes. Preheat the oven to 170°C (fan oven) and line a baking sheet with baking paper. Remove the cold dough from the refrigerator and cut off a piece. Return the rest to the refrigerator. Roll out the dough thinly and cut out circles or squares. Place on the baking sheet and bake for about 15-20 minutes, until the cookies are lightly browned. Repeat with the remaining dough. Makes about 70 cookies. Remove from the oven, let cool, and place in a cookie tin. You can also use 100g spelt flour and 150g plain flour, or spread the cookies with jam and stack them together.
