Ingredients for 4 servings:

  • 500 g onion(s), small yellow
  • Water
  • olive oil
  • Salt

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 50 minutes

Scrape the stems of the onions well at the base, but do not cut them off. Peel the onions, making sure to keep the stalks on top. Pre-cook the onions in boiling, salted water for about 7-8 minutes. Drain the water and let the onions become lukewarm. Arrange them on an ovenproof dish, drizzle generously with olive oil and season with salt. Bake in a preheated oven at 180°-200° for about 30 minutes. Turn off the oven, open the oven door a crack, and let the onions stand for about 10-15 minutes. Since the outer layer of the onion dries out and becomes a bit hard, hold it with your fingers on the stalk and scrape it off between your teeth. Anything left over can be discarded with a clear conscience (just like artichoke leaves). These onions can also be enjoyed cold. In this case, you can also eat the outer layer, as it becomes crispy and breaks easily.
