Alberto's papaya-orange-pepper chutney

Ingredients for 1 servings:

  • 1 m.-large papaya, peeled and pitted
  • 1 orange(s), peeled and filleted
  • 1 bell pepper(s), peeled and pitted
  • 1 onion(s), finely chopped
  • 100 g cranberries, dried
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • Chili flakes or powder
  • 200 g apple cider vinegar
  • 250 g orange juice, direct pressing
  • 200 g sugar
  • 1 tsp Cointreau, if desired

Instructions

Working time approx. 1 hour; Rest period approx. 2 days; Cooking/baking time approx. 20 minutes; Total time approx. 2 days 1 hour 20 minutes

Finely dice the papaya, orange, and bell pepper. Bring all ingredients to a boil in a saucepan, reduce heat, and simmer for another 15 minutes. Fill jars to the brim, seal, turn them upside down, and let them cool. Store for at least two days before eating. Pairs well with poultry and fish.
