Ingredients for 2 servings:

  • 6 tbsp amaranth, popped
  • 2 tbsp honey, liquid
  • 1 tbsp butter, soft
  • 1 tbsp sunflower seeds or almonds, chopped or raisins, if desired.
  • 1 tbsp chocolate coating

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

This little treat has the Spanish name Alegria and means joy/cheer.

Mix everything together in a bowl until a smooth dough forms. With moistened hands, press the dough into a small, shallow loaf pan and let it set in the refrigerator. Cut small bars with a sharp, damp knife. Store the rest in a cool place. I then shaped the bars into small balls and little tongues and covered them with a little chocolate coating.
