Ingredients for 6 servings:
- 200 g noodles (vermicelli)
- salt water
- 800 ml milk
- 200 g sugar
- some lemon peel, untreated (3 thin strips)
- 6 egg yolks
- Cinnamon
Instructions

Cook the vermicelli in salted water al dente according to the package instructions. Remove from the heat and drain. Combine the milk, sugar, and lemon zest in a saucepan. Heat gently, stirring frequently, until the sugar has completely dissolved. Add the noodles and immediately continue stirring until everything becomes creamy. Remove the pan from the heat and remove the lemon zest. Allow the milk and noodles to cool slightly. Meanwhile, beat the egg yolks until creamy and quickly stir into the slightly cooled milk, stirring constantly (the egg yolks should be mixed as quickly as possible). Bring to a boil briefly, stirring constantly. Transfer to a shallow baking dish and allow to cool. Once the surface has cooled, garnish with cinnamon to taste.
