Ingredients for 2 servings:
- 1 pack of glass noodles
- 1 pack of dried Mu-Err mushrooms
- Water for soaking
- 250 g minced meat
- 1 piece(s) ginger
- 1 clove(s) garlic
- 1 bunch of spring onions
- 2 limes, the juice
- fish sauce
- Soy sauce
- possibly coriander leaves
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
Soak the glass noodles and moo err mushrooms, then chop them finely. I always cut glass noodles with scissors, and with mushrooms, I trim off the hard nubs. Finely chop the spring onions, ginger, and garlic. Brown the ground beef and add all the other ingredients. Season with soy and fish sauce and simmer for about 20 minutes over medium heat. If desired, add some coriander. Let cool and serve.
