Ingredients for 2 servings:
- 3 onions
- 2 zucchinis
- 3 tomatoes
- 1 pointed pepper, red
- 1 pack of feta cheese with herbs (170 g) or natural feta (200 g)
- 1 tbsp vegetable stock powder
- 2 tbsp olive oil

I use organic ingredients for this dish. Wash the vegetables and cut them into small or larger, roughly equal-sized pieces/cubes, depending on your preference. Place them in a casserole dish and toss with vegetable broth (or simply seasoned salt and pepper) and olive oil. (Fresh herbs also go well with this dish.) Finally, simply crumble the feta cheese over the top. Place in the oven and bake at 200°C (400°F) for about 30 minutes. This goes perfectly with fresh white bread or bruschetta. This makes a simple, quick main course, as a side dish, or as a barbecue side dish.
