Ingredients for 1 servings:

  • 250 g eggplant(s)
  • 1 m.-sized onion(s), cut into rings
  • 150 g cherry tomatoes or date tomatoes, sliced
  • e.g. salt and pepper
  • n. B. Spice(s) and herbs of your choice
  • 200 g cottage cheese or grainy cream cheese with yogurt 0.4% fat

Cut the eggplant into approximately 1 cm thick slices and arrange them on a baking rack lined with baking paper. Evenly layer the eggplant with onion rings and tomato slices and season. Finally, spread the cottage cheese over the eggplant slices. Bake in a preheated oven at approximately 200°C (top/bottom heat, 180°C fan oven) for approximately 20-25 minutes. Serve with a delicious dressed lettuce or chicken breast fillet as a side dish. This is a very low-calorie dinner option that’s perfect for integrating into SiS. The whole thing has a nutritional value of 236 kcal, 1.5 g fat, 14 g carbohydrates, and 35.3 g protein.
