- 1 m.-sized onion(s), cut into rings
- 150 g cherry tomatoes or date tomatoes, sliced

Cut the eggplant into approximately 1 cm thick slices and arrange them on a baking rack lined with baking paper. Evenly layer the eggplant with onion rings and tomato slices and season. Finally, spread the cottage cheese over the eggplant slices. Bake in a preheated oven at approximately 200°C (top/bottom heat, 180°C fan oven) for approximately 20-25 minutes. Serve with a delicious dressed lettuce or chicken breast fillet as a side dish. This is a very low-calorie dinner option that’s perfect for integrating into SiS.
