Ingredients for 12 servings:

  • 12 slice(s) of bread (country bread), approx. 5-6 cm round
  • 100 g seaweed, fresh, e.g. Salicornes
  • 3 shallots
  • ½ bell pepper(s), red
  • 5 gherkins
  • 2 tbsp capers
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil, roasted
  • 1 pinch(s) of sugar
  • Lemon peel, grated

Rinse the seaweed to remove the salt. Repeat if necessary. Then chop. In a bowl, mix the seaweed with the finely diced shallots, gherkins, and bell peppers. Add the capers, lemon zest, and a pinch of sugar, and drizzle with the soy sauce and sesame oil. Grill the country bread, which should be easy to eat in one bite. Top with the seaweed tartar and serve immediately.
