Ingredients for 3 servings:

  • 6 cloves garlic
  • 1 egg(s), including the yolk
  • 250 ml oil (olive oil)
  • 1 tsp lemon juice
  • Salt
  • pepper, black

Aioli “Hans-style”: The most traditional way would be to crush the garlic cloves in a mortar, then add the egg yolk and—drop by drop at first—then gradually add the olive oil, stirring in the same direction with a pestle and mortar. Finally, when a delicate, smooth cream has formed, add the lemon juice and season with salt and pepper. Today, aioli is made with a blender.
