Ingredients for 4 servings:

  • 5 cloves garlic
  • 3 eggs, including the yolk
  • 1 tbsp mustard, hot
  • 1 salt
  • Pepper, white
  • 250 ml oil (olive oil)
  • ½ tbsp lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Original recipe

All ingredients should be at room temperature. In a large bowl, whisk the crushed garlic cloves, egg yolks, mustard, salt, and pepper (freshly ground, of course) until fluffy. Add the oil drop by drop, then in larger portions, stirring constantly. Each addition of oil must be completely absorbed by the sauce before adding more. Finally, whisk in the lemon juice. Aioli should always be made fresh and doesn’t need to rest, as it will add more flavor afterward.
