Ingredients for 3 servings:

  • 3 pork necks (pork neck), 200 g each
  • 500 g Knöpfle , from the refrigerated section
  • 3 m.-sized onion(s)
  • 100 g bacon, sliced
  • 125 g mountain cheese, Allgäu
  • e.g. mustard
  • 150 g cracklings for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Preheat the oven to 80 degrees Celsius using a casserole dish. Thinly slice the onions. Fry the bacon slices in a pan until crispy, then remove and keep warm. Fry the onion rings in the pan until translucent and keep warm. Add half of the crackling lard to the pan and fry the dumplings. Add the dumplings to the casserole dish. Heat the remaining crackling lard in the pan and sear the neck in it. Place the neck on the dumplings and spread with a little mustard. Place the bacon on the neck, then the onion rings and finally the cheese over the top. Spread the fat over the neck as well. Let the Allgäuer Schnitzel cook in the oven for about 30 minutes.
