Allgäu Cheese Soup

The perfect allgäu cheese soup recipe with a picture and simple step-by-step instructions.

  • 60 g Butter
  • 50 g Flour
  • 200 g Mountain cheese
  • 1 l Beef broth
  • 0,25 l Cream
  • Salt
  • Black pepper
  1. Let the butter melt in a saucepan, add the flour and sweat briefly until colorless. Pour in cold beef stock and stir immediately with a whisk until smooth. Simmer for 10 minutes, stirring occasionally. Add the grated mountain cheese and simmer until it has melted.
  1. Top off the soup with the cream and season with salt and pepper.
