Allgäu Cheese Soup

- 60 g Butter
- 50 g Flour
- 200 g Mountain cheese
- 1 l Beef broth
- 0,25 l Cream
- Salt
- Black pepper
- Let the butter melt in a saucepan, add the flour and sweat briefly until colorless. Pour in cold beef stock and stir immediately with a whisk until smooth. Simmer for 10 minutes, stirring occasionally. Add the grated mountain cheese and simmer until it has melted.
