Airy, Fluffy Raisin Rolls

The perfect airy, fluffy raisin rolls recipe with a picture and simple step-by-step instructions.

  • 50 ml Milk
  • 1 dice Yeast
  • 125 g Sugar
  • 650 g Flour
  • 1 pinch Salt
  • 1 pinch Citrine peel
  • 125 g Soft butter
  • 250 g Quark
  • 2 Eggs
  • 150 g Raisins
  1. Heat the milk in a small saucepan. Crumble the yeast, dissolve in the milk with 1 teaspoon of sugar, let rise for about 10 minutes.
  1. Mix 2,500 g flour, salt, lemon zest and remaining sugar in a bowl. Add soft butter, quark and 2 eggs.
  1. Pour in gently and work into a smooth dough. Gradually add 150 g flour until the dough no longer sticks to your fingers. Add the raisins, knead briefly.
  1. Cover the dough and let it rise to double its size. Knead again briefly, form rolls. Let rise again on the baking sheet for 10 minutes. Bake in a preheated oven at 200 degrees top / bottom heat for about 20 minutes.
