Ingredients
 

  • 50 ml Milk
  • 1 cube Yeast
  • 125 g Sugar
  • 650 g Flour
  • 1 pinch Salt
  • 1 pinch Citrine peel
  • 125 g Butter
  • 250 g Quark
  • 2 Eggs
  • 150 g Raisins

Instructions
 

  • Heat the milk in a small saucepan. Crumble the yeast, dissolve in the milk with 1 teaspoon of sugar, let rise for about 10 minutes.
  • Mix 2,500 g flour, salt, lemon zest and remaining sugar in a bowl. Add soft butter, quark and 2 eggs.
  • Pour in gently and work into a smooth dough. Gradually add 150 g flour until the dough no longer sticks to your fingers. Add the raisins, knead briefly.
  • Cover the dough and let it rise to double its size. Knead again briefly, form rolls. Let rise again on the baking sheet for 10 minutes. Bake in a preheated oven at 200 degrees top / bottom heat for about 20 minutes.
