Almond Croissant
The perfect almond croissant recipe with a picture and simple step-by-step instructions.
Dough:
- 300 g Flour
- 200 g Ice cold butter
- 200 g Cream cheese double cream setting
Filling / outer skin
- 200 g Sugar
- 100 g Ground almonds
- 50 g Chopped almonds
- Some orange zest and possibly Some cinnamon to taste
- 50 g Couverture white / brown / black
- Chill the dough for 1 1/2 – 2 hours, you can also make it and chill it
Extra filling:
- Nutella spread, chocolate or whatever you like.
- Not only for Christmas, always taste good!
- Beat the butter and flour with a hand mixer or food processor so that it combines well. Then add the cream cheese and mix well. Wrap the dough in foil and chill. About 1 1/2 hours can also be done the evening before.
- Now spread the sugar-almond mixture on the work surface, roll out the dough into a circle and sprinkle with the mixture in between and divide it into pieces of cake.
- Roll these up from the wide end into croissants and bake at 180 ° C for about 12-15 minutes. Now it depends a little on the stove, so have it in your field of vision.
- The sugar now caramelises a little (I like that very much), but it shouldn’t get too dark.
- After cooling, you can dip the ends in a couverture of your choice. Unfortunately, everyone has left like this, conclusion, it’s best to do it alone. So the last plate is now also empty.
