Almond Croissant

The perfect almond croissant recipe with a picture and simple step-by-step instructions.

Dough:

  • 300 g Flour
  • 200 g Ice cold butter
  • 200 g Cream cheese double cream setting

Filling / outer skin

  • 200 g Sugar
  • 100 g Ground almonds
  • 50 g Chopped almonds
  • Some orange zest and possibly Some cinnamon to taste
  • 50 g Couverture white / brown / black
  • Chill the dough for 1 1/2 – 2 hours, you can also make it and chill it

Extra filling:

  • Nutella spread, chocolate or whatever you like.
  1. Not only for Christmas, always taste good!
  2. Beat the butter and flour with a hand mixer or food processor so that it combines well. Then add the cream cheese and mix well. Wrap the dough in foil and chill. About 1 1/2 hours can also be done the evening before.
  3. Now spread the sugar-almond mixture on the work surface, roll out the dough into a circle and sprinkle with the mixture in between and divide it into pieces of cake.
  4. Roll these up from the wide end into croissants and bake at 180 ° C for about 12-15 minutes. Now it depends a little on the stove, so have it in your field of vision.
  5. The sugar now caramelises a little (I like that very much), but it shouldn’t get too dark.
  6. After cooling, you can dip the ends in a couverture of your choice. Unfortunately, everyone has left like this, conclusion, it’s best to do it alone. So the last plate is now also empty.
