Almond croissants

Ingredients for 1 servings:

  • 400 g marzipan
  • 220 g powdered sugar
  • 2 egg whites
  • 200 g almonds, sliced
  • 3 drops of bitter almond flavor
  • Couverture or cake icing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Coarsely grate the marzipan and mix with the powdered sugar, egg white, and baking flavor using the dough hook of a hand mixer until smooth. Sprinkle a baking tray with 100g of flaked almonds. Fill a piping bag with a large nozzle. Pipe 12 croissants, approximately 7cm wide and 5cm high, onto the almonds. Top with 100g flaked almonds. Bake in a preheated oven at 180°C on the second rack from the bottom for 15-17 minutes until golden brown (160°C fan oven). Allow to cool on the baking trays. Chop the chocolate coating or cake icing and melt it over a hot water bath. Dip the ends into the chocolate coating, drain well, and allow to dry. Tip: Save the remaining flaked almonds from the baking tray and use them for sprinkling on desserts or for other purposes.
