  • 50 g hazelnuts, ground
  • 100 g butter, cold
  • 50 g powdered sugar
  • 1 pinch of salt
  • 2 tbsp instant coffee powder
  • 1 egg yolk
  • 125 g flour, 405
  • 1 cup of chocolate coating, milk or dark chocolate
  • 50 g hazelnuts, roughly chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 42 minutes

makes about 30 pieces

Lightly toast the hazelnuts in a non-stick pan for a wonderful aroma. Allow to cool. Quickly knead the butter, powdered sugar, salt, egg yolk, coffee powder, roasted nuts, and flour into a smooth dough, form into logs, and wrap in foil. Let rest in the refrigerator for 1 hour. Preheat the oven to 160 degrees Celsius (fan oven). Cut small pieces from the logs, shape into balls, about the size of a walnut, and then form crescents. Place on a baking sheet lined with baking paper. Bake in the oven for about 12 minutes until golden brown. Allow to cool. Brush with chocolate coating, either dipping the whole thing or just decorating the ends with chocolate. Sprinkle with coarsely chopped nuts or decorate as desired. Once cooled, store in a tin. Caution: It’s highly addictive!
