Ingredients for 1 servings:

  • 200 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 100 g sugar, fine
  • 50 g brown sugar (castor sugar)
  • 1 pack of instant coffee powder (sachets) or 1 tbsp
  • 150 g butter or margarine or mixed
  • 1 egg(s)
  • 125 g desiccated coconut
  • 1 egg white
  • 3 tbsp powdered sugar
  • 100 g mocha beans (chocolate decoration)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Coconut meets coffee, makes 4 baking trays – approx. 110 cookies

Sift the flour and mix with the baking powder. Add a pinch of salt, the white and brown sugar, and the coffee powder. Add the softened butter or margarine and the egg and mix everything well. Now knead in the coconut flakes evenly. Let the dough cool slightly so the balls are easier to form. Form balls about 2 cm in diameter and place them slightly apart on a baking sheet lined with baking paper. Flatten them slightly with a teaspoon (or simply with your finger). This is important, as a coffee bean will later be placed on the cookie. Preheat the oven to 180°C (conventional oven: 160°C, gas mark 2). Bake the cookies for about 25 minutes. Remove from the oven and let cool. Beat the egg whites until stiff peaks form and add the powdered sugar, stirring constantly. Place a pinch of the egg white/powdered sugar mixture on each cookie and place a mocha bean on top. Wait until the egg white mixture is dry and store the cookies in a tin.
