Ingredients for 1 servings:

  • 1 cube of yeast or 2 packets of dry yeast
  • 1 tsp sugar
  • 600 ml milk
  • 100 g semolina
  • ½ tsp salt
  • 3 egg yolks
  • 1 pinch of cardamom
  • Cinnamon and sugar for rolling or
  • Sugar for rolling
  • 3 egg whites
  • 375 g flour
  • Fat for the mold and for frying

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes

Mix the yeast with 100 ml of warm milk and 1 teaspoon of sugar and let it rise (about 15 minutes in a warm place). Boil 500 ml of milk with the semolina. Let it swell for 5-10 minutes, taking care not to burn. Add the salt and let it cool. Beat the egg yolks with cardamom and cinnamon and add to the semolina, then fold in the yeast mixture. Beat the egg whites until stiff and fold into the semolina mixture, add the flour and mix. Let the dough rise for another 1-2 hours (don’t choose a bowl too small, as the dough will rise a lot). Grease a pie plate and fry one teaspoon at a time, adding more grease to the plate regularly. Dab the finished pie plates in sugar or a sugar-cinnamon mixture.
