Alpine cheese noodles with bacon and apple

Ingredients for 4 servings:

  • 400 g orecchiette
  • 150 g bacon, mildly smoked
  • 3 onions
  • 1 green apple (e.g. Granny Smith)
  • 3 tbsp oil
  • salt and pepper
  • 3 sprigs of marjoram
  • 200 g mountain cheese
  • Butter for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel and finely dice the onions. Cut the bacon into thin strips (I sometimes use diced ham – it tastes good too). Core, quarter, and dice the apple. Cook the pasta according to the package instructions until al dente. Preheat the oven to 150°C (top/bottom heat). Heat the oil in a large pan, fry the onions and bacon for about 4 minutes, add the apple, and fry for 3-4 minutes. Grate the mountain cheese and chop the marjoram. Drain the pasta, toss it in the pan with the mountain cheese and marjoram, and season with salt and pepper to taste. Transfer everything to a buttered ovenproof dish and bake in the hot oven for about 10-15 minutes.
