Alpine hay soup

Ingredients for 4 servings:

  • 2 handfuls of hay (alpine hay)
  • 1 bunch of soup vegetables
  • 1 leek(s)
  • 1 tbsp butter or oil
  • 1 liter broth (strong, good soup)
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 1 pinch(s) nutmeg, freshly ground
  • 4 tbsp cream
  • e.g. cheese, grated, grated
  • 1 tbsp fresh herbs, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Briefly sauté the finely chopped vegetables and leek in butter. Season to taste with salt, pepper, and nutmeg, pour in the soup, and simmer for 5 minutes. Place the hay in a sieve and let the soup and hay simmer for 20 minutes over low heat. Then, remove the sieve and hay from the soup. Refine the soup with cream or cheese, if desired, and serve garnished with herbs.
