Alpine turkey schnitzel

Ingredients for 6 servings:

  • 6 turkey schnitzels, approx. 150 g each
  • 1 ½ tbsp, heaped herb cream cheese
  • 6 slices of mountain cheese
  • 6 slice(s) bacon or raw ham
  • 2 tbsp rapeseed oil
  • 375 ml milk
  • 2 tbsp tomato paste
  • 200 g crème fraîche, e.g. with herbs
  • 1 tbsp fresh herbs, chopped, e.g. oregano, sage, thyme and/or rosemary
  • possibly salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Pound the turkey schnitzels on both sides with a meat tenderizer to make them as thin as possible. Then spread the cream cheese on top of each schnitzel. Place a slice of mountain cheese on top and roll up the schnitzel. Wrap a slice of bacon around each rolled-up schnitzel. Secure with toothpicks or string. Heat the oil in a pan and fry the prepared schnitzels briefly until golden brown, then place them in a roasting pan or casserole dish. Pour the milk over the pan juices, add the tomato paste and herbs, and stir. Add the crème fraîche and bring everything to a gentle boil. Season to taste and add salt and pepper if desired. Pour the sauce over the schnitzels and bake in a preheated oven at 180°C for about 25 minutes. Serve with French fries, tagliatelle or spaetzle, as well as lamb’s lettuce or mixed vegetables.
