Alsatian sausage salad

Ingredients for 4 servings:

  • 2 eggs
  • 400 g meat sausage (coarse Lyoner)
  • 4 lettuce leaves
  • 2 tomatoes
  • 1 onion(s)
  • 3 tbsp white wine vinegar
  • 3 tbsp oil (walnut oil)
  • 1 tsp mustard
  • Salt
  • pepper
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Boil the eggs for 10 minutes. Remove from the pan, rinse, and let cool. Slice the Lyoner sausages. Wash the lettuce leaves and shake dry. Wash the tomatoes, remove the stems, and quarter them. Peel and chop the onion. Make a dressing with vinegar, oil, mustard, salt, and pepper. Arrange the lettuce leaves on 4 plates. Peel and halve the eggs, then place half an egg on each plate. Arrange the tomato quarters, chopped onion, and sausage slices on top. Cover the sausage salad with the dressing and sprinkle with parsley.
