This is how the baked goods work without baking powder
- A very old baking ingredient that is still used in many countries instead of baking powder is baking soda. If you use baking soda, add some natural yogurt, milk, cream, or a few drops of lemon juice to the dough.
- Another alternative to baking soda is alcohol. Your dough will also rise well with a good dash of cognac, a fruit brandy such as kirsch or rum. Although most of the alcohol will dissipate during baking, it’s not necessarily the preferred option when eating with children or dry alcoholics.
- Pure yeast, on the other hand, is a safe alternative to baking powder. However, you should first dissolve the yeast in warm water and then add the flour. Then place a kitchen towel over the mixing bowl and let the yeast rise. Then add the remaining ingredients and pour the batter into the baking pan. Wait a few minutes before putting the baking pan in the oven.
- Eggs are also a good way to compensate for the lack of baking powder. With this slightly more calorie-heavy variant, you put significantly more eggs in the dough than is noted in the recipe.
- If you want to bake bread or something else savory, use sourdough. You get sourdough by mixing rye flour with water. If the production of the sourdough is too tedious for you, simply buy it ready-made, for example in your bakery.
