  • The hasty method works best if you stir the baking soda into the flour and then add the lemon juice or vinegar.

Baking powder production as a storable variant

To make storable baking powder, you can use two different options. You need either ascorbic acid or citric acid. The basic ingredient is baking soda again. In addition, cornstarch is added to each mixture. This serves as a release agent. This keeps the mixture free-flowing and protects baking soda and the acid used from moisture.

  • Baking powder with ascorbic acid: You can get the ingredient ascorbic acid in drugstores, pharmacies, supermarkets, and online. It is a dietary supplement.
  • Mix equal parts ascorbic acid, fine cornstarch, and baking soda. Place the weighed ingredients in a tightly sealed jar. For a dough with 500 grams of flour, use 20 grams of the mixture.
  • Baking powder with citric acid: For this mixture, you need 65 g of crystalline citric acid, 75 g of baking soda, 25 g of fine cornstarch, and 15 g of silica. Mix all the ingredients and put them in a tightly closed screw-top jar.
  • The total amount is enough for 12 applications. For a dough with 500 grams of flour, you need 15 grams of the mixture.
  • Baking powder with tartaric acid: If you want to avoid the phosphate acid used in conventional baking powders, you should use tartaric acid. You can buy the acid online or at the pharmacy.
  • Mix 75 grams of baking soda with 60 grams of crystalline tartaric acid. There are also 15 grams of silica and 30 grams of cornstarch. For a dough with 500 grams of flour, add 15 grams of the mixture.
