Ingredients for 4 servings:

  • 500 g boiled potatoes, peeled
  • 200 g raw smoked bacon
  • 100 g bacon, fatty (green bacon)
  • 6 eggs
  • 100 ml condensed milk or cream
  • 1 bunch of spring onions, fresh
  • 2 garlic cloves
  • 1 bunch chives, fresh
  • Salt and pepper, white from the mill
  • 2 tbsp butter

Working time approx. 30 minutes; Total time approx. 30 minutes

but you can also eat in the evening

Cut the potatoes into thin slices, the bacon and lardons into small cubes, the spring onions into thin rings, the chives into small rings, and the garlic into fine slices. Crack the eggs into a bowl and whisk them with the cream. Fry the green bacon cubes in a large pan and brown until crispy. Add the potato slices and fry everything until lightly browned. Then add the lardons, spring onions, and garlic and let them brown. Season everything with salt and pepper and stir in the butter. When everything is cooked through, add the egg cream and let it set with the lid on and over low heat. Serve on plates and sprinkle with chives. Serve with a freshly dressed green salad. Alternatively, you can use leftover sausage (beer ham, hunting sausage, knackwurst) or roast leftovers instead of the bacon.
