Amaranth muesli

Ingredients for 4 servings:

  • 1 cup natural amaranth (not popped)
  • 2 cups water
  • 80 g flaxseed
  • 4 figs, dried
  • 25 raisins
  • 20 g cashew nuts
  • ½ apple
  • 4 tbsp honey or to taste
  • ½ vanilla pod(s)
  • 2 pinches of cinnamon powder
  • Desiccated coconut, add to the finished muesli to taste

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Simmer the amaranth for about 30 minutes according to the package instructions, then let it steep for another 10 minutes. After 15 minutes, add the flaxseed to the simmering amaranth and cook until tender. Meanwhile, finely chop the cashews, vanilla pod, and 1/2 apple. Add to the amaranth-flaxseed mixture and simmer for a few more minutes with the figs, raisins, honey, and cinnamon, then serve. Sprinkle on a little more desiccated coconut to taste. With its high tryptophan content from the cashews and figs, as well as the omega-3 fatty acid contained in the flaxseed, this muesli is a great way to start the day, full of serenity, harmony, and a sense of balance.
