Ingredients for 1 servings:

  • 200 g almond(s), ground
  • 2 eggs
  • 1 bag of bitter almond flavoring
  • 100 g sugar
  • powdered sugar

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Italian coffee pastries

Preheat the oven to 150 degrees Celsius (300 degrees Fahrenheit). Mix the ground almonds with 50g of the sugar. Meanwhile, separate the two eggs and beat the egg whites with the remaining 50g of sugar until glossy and fluffy. Fold the bitter almond flavoring and the almond mixture into the egg whites, one spoonful at a time. Place small heaps of the dough on a baking sheet lined with baking paper (using two teaspoons if necessary). Bake for 15 minutes at 150 degrees Celsius (300 degrees Fahrenheit). Turn off the oven and bake in a closed oven for 1 hour. It really works. Store in a metal tin; if you like, sprinkle the cookies with powdered sugar.
