Amaretti – cinnamon – parfait with cherries

Ingredients for 4 servings:

  • 1 egg(s)
  • 3 egg yolks
  • 50 g powdered sugar
  • 1 tsp cinnamon
  • 100 g biscuits (Amaretti)
  • 250 g cream, whipped
  • 400 ml cherry juice
  • 250 ml red wine
  • 2 stalk(s) cinnamon
  • 100 ml blackcurrant
  • 1 tbsp pudding powder, vanilla flavor
  • 1 lemon(s), juice
  • 300 g cherry(s), pitted (from the jar)
  • 30 g cocoa powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Beat 1 egg and 3 egg yolks with powdered sugar and cinnamon in a bowl with a hand mixer for about 5 minutes until frothy. Crumble the amaretti and fold them into the egg foam alternately with the whipped cream. Line a dish (approx. 500 ml capacity) with plastic wrap, pour in the parfait mixture, and freeze for 6 hours. Meanwhile, in a saucepan, combine the cherry juice with red wine, cinnamon sticks, and blackcurrant liqueur. Reduce the amount to 300 ml. Remove the cinnamon sticks. Mix the vanilla pudding powder with the lemon juice and use it to thicken the boiling sauce. Stir in the cherries. Turn the amaretti and cinnamon parfait out of the dish and remove the plastic wrap. Dust with cocoa powder, cut into pieces, and serve with the warm cherries.
