Amaretti cookies with pine nuts

Ingredients for 1 servings:

  • 50 g pine nuts
  • 100 g icing sugar, sieved, for the dough, plus a little more for rolling the amaretti
  • 180 g almonds, ground
  • some orange zest
  • 2 egg whites
  • 2 tsp honey or agave syrup

Preheat the oven to 175°C (fan). Combine the pine nuts and powdered sugar and blend in a blender or similar until finely ground. Add the ground almonds and orange zest. Beat the egg whites with the honey until stiff. Carefully fold the egg whites into the almond mixture. Sift a little powdered sugar onto a plate for rolling. Depending on the desired cookie size, use a tablespoon or teaspoon to form balls from the dough and roll them well in the powdered sugar. If the dough is still very soft, add 1-2 tablespoons of ground almonds. The formed balls should not spread much. Place the dough balls on a baking sheet lined with baking paper, leaving some space between them. Bake the amaretti for 12-15 minutes on the middle rack, until lightly browned and still soft in the center. Keep an eye on them! Then let the amaretti cool completely. Tip: If desired, you can refine the dough with a little amaretto or rum. Depending on the size of the cookies, the specified amount is enough for about 20 cookies. They contain approximately 75 kcal per serving.
