Amaretti Soufflé

Ingredients for 4 servings:

  • 150 g biscuits (amaretti)
  • 3 tbsp rum
  • 150 ml cream
  • 3 eggs
  • 3 tbsp powdered sugar
  • Fat for the molds
  • Powdered sugar for dusting

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Crumble the amaretti, mix with the rum and cream, and let stand for 10 minutes. Separate the eggs and stir the egg yolks into the amaretti mixture. Preheat the oven to 180 degrees Celsius. Beat the egg whites with the powdered sugar until stiff peaks form and fold evenly into the amaretti cream. Grease four small baking dishes (0.25 l each) and fill with the amaretti mixture, leaving a rim of approximately 2 cm at the top. Bake the soufflés in the preheated oven (middle rack) for 30 minutes. Remove from the oven and immediately dust with powdered sugar. Serve with eggnog sauce.
