Amaretto Mascarpone Cake

Ingredients for 1 servings:

  • 350 g flour
  • 125 g sugar
  • 100 g butter
  • 2 eggs
  • 1 tsp baking powder
  • 250 g mascarpone
  • 150 g biscuits (amaretti)
  • 80 g sugar
  • 1 egg(s)
  • 50 ml Amaretto
  • some powdered sugar

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 30 minutes

For the dough, put all the ingredients in a bowl and knead into a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for 30 minutes. Line a 24 cm springform pan with baking paper and place 2/3 of the dough in it. Pull the edges up slightly. Mix the mascarpone, sugar, egg, and amaretto in a bowl. Crush the amaretti cookies and stir them into the mixture. Spread the cream over the dough in the springform pan. Roll out the remaining dough on a floured surface and cut into strips. Arrange the strips of dough in a lattice pattern on the cake. Bake in an oven preheated to 180°C for approx. 35 minutes. Dust with icing sugar before serving.
