Ingredients for 1 servings:
- 3 egg whites
- 125 g sugar
- 100 g pistachios, ground
- 100 g almond(s), ground
- 2 tbsp flour
- 100 g chocolate
- 2 tbsp Amaretto
- 1 egg yolk
- 50 g butter
- 50 g powdered sugar
- 2 tbsp almonds, chopped
- 100 g semi-sweet chocolate coating
- 20 g pistachios, chopped
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
makes about 25 cookies
Beat egg whites until stiff, gradually adding the sugar. Beat until stiff. Fold in the ground pistachios, almonds, and flour. Pipe approximately 50 cookies onto baking paper (using a piping bag). Bake in a preheated oven at 150°C (300°F) for 20-25 minutes. Melt the chocolate and let cool. Stir in the liqueur, egg yolk, butter, sugar, and chopped almonds. Divide among approximately 25 cookies. Cover with the remaining cookies. Decorate with melted chocolate coating and chopped pistachios.
